Pelican Hotel appoints new Executive Chef Paolo Del Papa
The Pelican was acquired by Renzo Rosso, owner of the Italian fashion giant Diesel in 1993. Doors opened for the first time in 1994 and it has since been one of unique venues in the heart of the Art Deco Mecca. Decorated around a 70’s theme with mid-century swag lamps from Rosso’s private collection the café is considered a favorite spot to wine and dine, and has become a "classic" restaurant in Miami Beach, recognized by Wine Spectator Magazine, Miami New Times & Food Network’s Giada DeLaurentis. The Pelican Cafe is headed by Executive Chef Paolo Del Papa & offers sophisticated a Continental Menu with a Mediterranean flare.
Chef Del Papa, was born in Viterbo, Italy and felt he was always destined to be a chef. Born in a culinary family, Paolo fell in love with the art of cooking from a very young age. He pursued a culinary degree in Rome and continued working under his father’s direction. In 1999 Chef Paolo moved to London, where he spent three year’s apprenticing under the famed Chef Antonello Tagliabue; a turning point in his professional growth and now on his way to refining his flavor profiles and techniques.

Following his time in London, Chef Del Papa returned to Italy to only after a few years move to New York City as executive chef of Bice New York. Exceeding all expectations, Chef Paolo was presented the opportunity to become part of the corporate team at The Bice Group, opening several restaurants around the country. Paolo, went on as a private chef in Palm Beach & continued his growth in his career as Corporate Chef to famed Miami Beach “Casa Tua” where he supervised the Miami location and opened “Casa Tua” Aspen showcasing his young and exciting culinary expertise. Following his time in “Casa Tua” Miami Beach, he became Chef Partner for “Rock Lobster” & now heads the kitchen at the Pelican Café as Executive Chef.
